Jacques Varet: Shaping Hospitality Excellence in Cambodia

Jacques Varet

In the vibrant heart of Cambodia’s evolving hospitality landscape, few leaders stand out quite like Jacques Varet, the General Manager of FCC Angkor by Avani. His leadership is marked not only by operational excellence but by an unmistakable passion for creating experiences that resonate rooted in authenticity, culture, and human connection. Jacques represents a new era of hoteliers: a leader who blends global expertise with local immersion, transforming vision into initiatives that uplift both guests and communities.

A Journey Shaped by Passion, Precision, and Purpose

Jacques’ journey into hospitality began long before he ever managed a hotel. As a child, he was deeply inspired by exclusive weekends spent with his family at Relais & Chateaux hotels and resorts experiences that planted in him a fascination for service, generosity, and the art of creating unforgettable moments.

That early exposure instilled both ambition and humility. Determined to carve his own path, he pursued a hospitality education up to the master’s level, followed by a Master of Wine in the Rhone Valley a discipline that refined his palate and shaped his understanding of craftsmanship. This unique combination of academic rigor and sensory mastery opened the doors to his first professional milestone: joining Gordon Ramsay in London as a Sommelier.

Being a sommelier, however, was only the beginning. Jacques knew he belonged in a role where he could influence, innovate, and inspire. “I always wanted to become an actor of the changes,” he often reflects. For him, leadership was not a title but a vehicle for impact. It took a decade ten years of learning, adapting, failing, improving, and maturing before he rose to the position of General Manager, a journey that gave him the confidence to lead with purpose and clarity.

Leadership Built on Experience, Empathy, and the Pursuit of Excellence

Jacques describes his leadership philosophy as deeply human and experiential. At its heart lies a simple but powerful mission: to create exceptional experiences for guests. The smile of a satisfied visitor, the warmth of a heartfelt compliment, or the quiet joy of a guest discovering something new these moments fuel him.

He is guided by a belief that hospitality is not merely service but emotion. For Jacques, every detail matters: the quality of the products, the enthusiasm of the team, the authenticity of interactions. And these details must reflect not just the property but the culture surrounding it.

Equally important to him is his connection with the local community. Cambodia, with its rich heritage, warm people, and abundant creativity, has become more than a workplace it is a collaboration. Jacques constantly challenges his own ideas, pushes boundaries, and seeks ways to innovate, always asking: How can we do better? How can we reflect Cambodia more meaningfully? This mindset forms the backbone of his leadership dynamic, reflective, and committed to continuous improvement.

Innovating Through Local Identity: The Spirit of Cambodia, Distilled

Among the many initiatives Jacques has championed, the most widely celebrated is the “Signature Local Spirit” project a bold and imaginative undertaking grounded in sustainability, community empowerment, and creativity.

Coming from the wine industry, Jacques understood the transformative power of beverages in shaping cultural identity. Yet Cambodia, still without vineyards, relied heavily on imported spirits. He envisioned something different: a line of spirits produced 100% locally, crafted together with the community, and showcased proudly at FCC’s iconic Scribe Bar.

The project began with a partnership with Seekers, resulting in the first bespoke Gin. From there, momentum grew. An Herbal Kulen Gin followed, then a Vodka, a Rum, and now the latest creation set to launch on December 4th: “PARADOX by Herbal Kulen,” a private-collection Gin that embodies sophistication, heritage, and innovation.

Every evening, guests at FCC are invited to taste these spirits, learning the stories behind them and understanding the craftsmanship that flourishes when a community works together. The initiative is more than a beverage program it is a statement of identity. FCC became the first establishment in Cambodia to feature such an extensive lineup of locally produced, community-driven spirit creations.

Leading with Values: Commitment, Development, and Shared Vision

Jacque’s priority is always his team. “Knowledge, training, and ideas are the added value we bring,” he says. He believes in shaping professionals who can represent Cambodia’s hospitality sector with pride and excellence. This is why FCC continuously invests in training and development, ensuring that every team member grows not only in skill but in confidence.

Every six months, service standards are reviewed and elevated an exercise that is not top-down but collaborative. Jacques wants his team to be the drivers of change. Their insights, experiences, and creativity help refine processes and shape exceptional service journeys.

He leads not by instruction but by example, training side by side, repeating processes, listening, and communicating transparently. To him, leadership is co-ownership transformations succeed when everyone feels involved and empowered.

Turning Challenges into Opportunities

No leadership path is free of challenges, and Jacques has faced his share. One of the greatest obstacles, he notes, is bridging the gap between idea and execution introducing a new concept in a way that the team truly understands its purpose and sees its value.
